Chicken & Snow-Pea Sprout Baguettes Recipe

I have a recipe to share with you today... and it is a great one for an outdoor event.  This makes a great sandwich or baguette filling, which is fabulous for a picnic or a snack that you want to make ahead of time.  It is a nice twist on a chicken sandwich, which is packed with flavour and lots of veggies too!

The ingredients are:

Shredded chicken (1 BBQ chicken or 3 cooked chicken breasts)
3/4 cup mayonnaise
3 celery sticks, sliced
80g snow pea sprouts, cut in half
3 shallots, sliced
Salt and pepper

The method is:
1.  Place chicken, mayo, celery, snow pea sprouts and shallots in bowl.
2.  Gently stir until well combined.
3.  Season to taste, with salt and pepper

I served these dinner rolls with the chicken filling in them, as mini baguettes for Mother's Day last year.  I put a couple of strips of snow-pea sprouts along the top of the mini-baguette, which made an easy garnish!
